Introduction:


Bandeja paisa is a traditional Colombian dish originating from the Antioquia region, particularly associated with Medellín. Historically eaten by farmers (campesinos) to sustain them during long workdays, the dish is now a symbol of Colombian cuisine, loved for its hearty, diverse ingredients.


A Taste of History:


The origins of bandeja paisa date back to the 19th century, when it was a meal designed to provide sufficient energy for farmers and labourers in the Antioquia region. Over time, this dish evolved, gaining national recognition and becoming a celebrated part of Colombian culture. It’s especially popular in Medellín, where it reflects the agricultural richness and traditions of the region.


Ingredients:


  • Red beans (frijoles rojos)

  • White rice (arroz blanco)

  • Minced beef (carne picada)

  • Chorizo (chorizo)

  • Pork belly (bandeja de cerdo)

  • Fried egg (huevo frito)

  • Avocado (aguacate)

  • Arepa (arepa)

  • Plantain (plátano)

  • Onion (cebolla)

  • Garlic (ajo)

  • Coriander (cilantro)


Preparation Guide:

  1. Prepare the red beans (frijoles rojos): Soak the red beans (frijoles rojos) overnight, then cook them with onion (cebolla), garlic (ajo), and coriander (cilantro) until tender. Season with salt to taste.

  2. Cook the rice (arroz blanco): Rinse the white rice (arroz blanco) and cook according to package instructions.

  3. Prepare the minced beef (carne picada): In a pan, sauté the minced beef (carne picada) with chopped onion (cebolla) and garlic (ajo) until browned.

  4. Cook the chorizo (chorizo): In another skillet, cook the chorizo (chorizo) until browned and fully cooked. Set aside.

  5. Fry the pork belly (bandeja de cerdo): Fry slices of pork belly (bandeja de cerdo) until crispy and golden brown.

  6. Fry the egg (huevo frito): In a small pan, fry the egg (huevo frito) sunny-side up.

  7. Prepare the plantain (plátano): Slice the plantain (plátano) and fry until golden and soft.

  8. Assemble the dish: On a large platter, arrange portions of red beans (frijoles rojos), rice (arroz blanco), minced beef (carne picada), chorizo (chorizo), fried egg (huevo frito), slices of avocado (aguacate), arepa (arepa), and fried plantain (plátano). Garnish with coriander (cilantro) if desired.
