Known for its bold, vibrant flavours, huevos rancheros is often served with sides like refried beans (frijoles refritos), avocado (aguacate), and occasionally cheese or sour cream. The dish has transcended borders and gained popularity in the United States, particularly in Tex-Mex cuisine, where additional toppings and sides are common.

Huevos rancheros has its roots in rural Mexican cuisine, where it was traditionally prepared as a hearty breakfast for ranchers, or "rancheros," who needed a nutritious start to their day. The dish combined simple, readily available ingredients - eggs, tortillas, and fresh tomatoes - to create a filling and flavourful meal. Over time, this humble dish spread from the farms to urban areas and became a staple on breakfast tables throughout Mexico. Today, huevos rancheros can be found in homes and restaurants, often with regional variations that reflect the diversity of Mexican culinary traditions.


Ingredients:

  • 4 corn tortillas (tortillas de maíz)

  • 4 large eggs (huevos grandes)

  • 1 cup tomato sauce (salsa de tomate) or fresh salsa

  • 1 small onion, diced (cebolla)

  • 1-2 jalapeños or serrano peppers, chopped (chiles jalapeños or serranos)

  • 1 tablespoon vegetable oil (aceite vegetal)

  • Fresh cilantro, chopped for garnish (cilantro fresco)

  • Salt and pepper to taste (sal y pimienta al gusto)

  • Optional toppings: avocado (aguacate), cheese (queso), sour cream (crema agria)


Preparation Guide:


  1. Prepare the sauce: in a skillet, heat the vegetable oil over medium heat. add the diced onion and chopped peppers, sautéing until softened. pour in the tomato sauce and let it simmer for 5-10 minutes. season with salt and pepper to taste. set aside

  2. Fry the tortillas: in another skillet, lightly fry the corn tortillas one at a time in a small amount of oil until warm and slightly crisp. drain on paper towels to remove excess oil

  3. Cook the eggs: in the same skillet, crack the eggs and fry them sunny-side up or to your preferred doneness. season with salt and pepper

  4. Assemble the dish: place each fried tortilla on a plate. top with a fried egg and spoon over the warm tomato sauce

  5. Garnish: sprinkle with chopped cilantro and add any optional toppings, such as avocado, cheese, or sour cream

  6. Serve: enjoy immediately, often with refried beans on the side for a more complete meal
